Lately I’ve been really obsessed with cobb salads, and especially the Green Goddess Cobb from Panera – but buying a $6 salad multiple times a week is not a sustainable habit.
So I decided to put in the minimal amount of effort and get the ingredients to make it myself. And, surprise surprise, I like my own version even more than the store-bought.
Plus, I love this recipe because it’s chock full of protein and healthy fats with the avocado, egg, and chicken. It’ll keep you full and energized all day, plus it’s delicious and healthy! Win-win!
- Chicken breast, diced
- Bacon crumbles
- Avocado, sliced
- Tomatoes, diced
- Hard boiled egg, sliced
- Spring mix
- Feta cheese
- Green Goddess salad dressing (full disclosure: I bought the Kraft version because I don’t have a food processor. But if you really want to get crafty, Panera put their own recipe up on their blog right here).
- Cook the chicken breast to your liking – I cooked mine in a pan with some lemon pepper seasoning and it’s delish.
- Toss your spring mix into a bowl or salad plate, then assemble the ingredients on top. For extra Instagram-ability, I like to arrange them like so, with the avocado, egg, chicken, tomato, and bacon arranged nicely on top. But if we’re being honest, it all gets mixed in anyways, so just have at it.
- Top with a sprinkle of feta cheese and some Green Goddess dressing and voila! Perfect tasty lunch or side dish. Toss it in a mason jar or container for an easy on the go lunch at work or just enjoy as a main course for dinner.
