What’s Galentine’s Day?

To quote Leslie Knope (patron saint of Galentine’s Day):

“Every February 13th, my lady friends and I leave our husbands and our boyfriends at home, and we just come and kick it, breakfast-style. Ladies celebrating ladies. It’s like Lilith Fair, minus the angst. Plus frittatas.”

Sadly, Galentine’s Day falls on a Monday  so there isn’t much brunch time to be had. Also most of my friends are now scattered around the country. #adultlife

But still, the Galentine’s Day spirit is alive and well in me, and I wanted to share a delicious brunch-worthy drink recipe that’s perfect for every day!

Blackberry Thyme Spritzer

  • 1/3 cup blackberries
  • 1/3 cup water
  • 1/3 cup sugar
  • 1 bottle champagne
  • 1 bottle pink lemonade
  • Thyme sprigs

To make the drink:

  1. Add blackberries, water and sugar to a saucepan and bring to a boil. Reduce the heat to low and let simmer for 10 minutes to create a blackberry simple syrup.
  2. Strain the berries and let the syrup cool a little. Add two tablespoons of syrup to each glass and fill with 2 parts champagne and 1 part pink lemonade.
  3. Garnish with a thyme sprig and a few blackberries.

And voila! Simple, easy and delicious.

  • That looks absolutely divine. I have to try and replicate that! Not sure how successful I will be but I am sure that I can definitely deal with the bottle of champagne side of things!

    I have never really been one for Galentine’s or Valentine’s but this year I celebrated both on what seems to be the completely wrong days! However my overall thoughts on the entire thing are that there shouldn’t be one specific day to pigeon hole your love for your friends or significant other even though it is nice to have a bit of a celebration!

    So for Valentine’s the Mr and I had a weekend of nothing but home comforts and alone time, we chilled just us and watched all of our favourite shows whilst pigging out in bed!

    For Galentine’s myself and the bestie went to see the other part of our trio to deliver a card and chocs as she is the only single one and we had a night of camembert, bread, butter and laughter.

    Next time we have a get together I am taking this recipe with me! x
